White chocolate, strawberry & pistachio rocky road 🍓

A festive treat to make for your loved ones!

How have I never shared a rocky road recipe before? Mine features pillowy little marshmallows, toasted pistachios, and bursts of dried strawberries set in velvety white chocolate. I love the imperfect nature of this festive treat, and how it can become a make-it-your-own adventure.

Ingredients:

• 200g white chocolate (about 1 1/2 cups if using pieces)

• 1 cup dried strawberries, roughly chopped

• 1 cup lightly toasted pistachios, roughly chopped

• 2 cups mini marshmallows

Method:

Line a smallish slice tin or container with baking paper.

Gently melt the chocolate over a double boiler.

In a large bowl, add the strawberries, pistachios and marshmallows. Pour the melted chocolate over the top, and mix until well coated. Tip the mixture into your prepared dish, and spread out evenly.

Place in the fridge to set for at least half an hour.

Slice into large pieces. Best kept in an airtight container in a cool place.

Makes 12 pieces.
