Tofu scramble with turmeric, chives & sweet onion
A gentle, golden breakfast (or lunch) for two.
I have nothing against eggs. In fact, they are a daily companion. Soft-boiled at breakfast, perhaps poached and resting on sourdough come lunch. But now and then, I long for a gentle shift. Something new to stir into the pan. And with half a block of tofu waiting patiently in the fridge, I was drawn to create a version of scrambled tofu that felt warm, comforting and full of exquisite flavour.
This is a dish that asks very little of you - just a few well-chosen ingredients, a wooden spoon, and a few quiet moments at the stove. What you end up with is a breakfast that’s soft and creamy, delicate, yet deeply savoury. Golden with turmeric, fragrant with chives and garlic, and rounded by the mellow sweetness of sautéed onion. Leeks or shallots, should you have them, would make a deliciously dreamy substitute.
