Ingredients:
1/2 cup cashew butter (or any nut butter)
1/4 cup melted coconut oil or butter
3 tbsp pure maple or honey
1 1/2 cups fresh dates, pitted
A pinch of sea salt
2 cups rolled oats
1/2 cup freeze-dried strawberries (dried blueberries are also yummy)
100g chocolate, roughly chopped (I used a caramel white chocolate, but any kind works well!)
Method:
Add all ingredients (except for the chocolate) to a food processor, and pulse gently until the mixture comes together.
Tip the mixture into a slice tin lined with baking paper, then scatter the chocolate over the top. Press down evenly.
Pop in the fridge or freezer to set for a few hours. Slice into bars, and enjoy!
Makes 9 decent sized bars, or 18 smaller ones.
I find these bars are best stored in the fridge, however you can put them into a lunchbox, they’ll just be a little softer and more fudgy in texture.
