Salmon roasted with butter beans, basil and olives
Delicious with sourdough for mopping up all the juices.
This very simple method is by far the most delicious way to cook salmon when time is a pinch. The blistered tomatoes, butter beans and juice of the lemon collapse into a meltingly delicious sauce to surround the succulent fish. Slightly tangy thanks to the olives, this dish is also beautifully fragrant with the final flourish of fresh basil or parsley. It’s my kids favourite, and we serve it with a delicious locally made sourdough for mopping up all the juices.
