There's something about the combination of oats, coconut sugar and butter – these simple ingredients truly work together so beautifully to create something sweet, buttery, and deeply delicious.
Ingredients:
1 1/2 cups spelt, buckwheat or regular flour
1 1/2 cups rolled oats
3/4 cups coconut, muscovado or brown sugar
1/2 tsp baking soda
3 tbsp poppy seeds
150g cold butter, cut into cubes
2 cups raspberries (or berries of your choice)
1/2 cup berry jam
Method:
Preheat your oven to 160°C, and grease or line a slice tin with baking paper.
Add the flour, oats, sugar, baking soda, poppyseeds and butter in a bowl. Using your hands, rub the mixture together  until it resembles fine breadcrumbs.Â
Take about 2/3 of the mixture and press evenly into your slice tin.
Mix together the blueberries and jam, and spread over the base. Sprinkle the remaining crumble mixture evenly on top.
Bake for 30 minutes, or until golden on top.
Cool in the tin entirely before slicing into squares.Â
Makes 9 large slices (or lots of smaller ones).
