Fancy hash browns
Adding parmesan, chives and plenty of freshly cracked pepper bumps up the flavour quite a notch!
These fancy hash browns are my idea of an anytime meal! You could serve with bacon and eggs, or top with sour cream, smoked salmon and chives (like I did). Adding parmesan, chives and plenty of freshly cracked pepper bumps up the flavour quite a notch! Feel free to get creative with herbs and additional ingredients - some feta, a little chilli. You could even swap out the potatoes for kūmara or do a blend?
This recipe makes quite a few - about 15 hash browns, half if you need to!
Ingredients:
4 medium potatoes, grated (4 cups)
1/2 cup cornflour or regular flour
1 cup grated parmesan or cheddar
A bunch chives, finely chopped
2 free range eggs
1 tsp sea salt
Lots of cracked pepper
Method:
Rinse grated potatoes in a sieve until the water is clear, then drain and squeeze dry between a clean tea towel (or paper towels).
Transfer the grated potato to a large mixing bowl, and add the remaining ingredients. Mix until well combined.
Fill the base of your frypan with olive oil, and place over medium heat. Spoon large scoops of the potato mixture into the pan and cook for 3-4 minutes on each side, or until super golden and crispy.
Serve warm topped with whatever you please!
