After many days of Christmas indulgence, I can’t help but crave a light and fresh summertime meal. Fresh corn on the cob, grilled and dressed up with chipotle-lime mayo and a sprinkling of finely grated parmesan. Minty pea guacamole with chilli and lots of lemon.
