A quick and tasty vegetarian meal that my family loves ❤️
For the chive mayo:
1/2 cup mayonnaise or aioli
1/4 cup pickled gherkins, finely chopped
A bunch of chives, finely chopped
Freshly cracked pepper
1 tsp dijon mustard
For the fritters:
1 head broccoli, cut into florets
3/4 cup grated cheddar or parmesan
A handful fresh mint and parsley, finely chopped
200g feta, diced
3 free range eggs
1/2 cup flour or GF flour
1 tsp garlic powder
1 tsp onion powder
Neutral oil for frying
Method:
Add all mayo ingredients to a small bowl, and stir to combine. Set aside until ready to serve.
Cook the broccoli in salted boiling water for 5 minutes, or until just tender. Drain and allow to cool. Roughly chop the cooked broccoli, and then toss with the remaining ingredients.
In a large frying pan, fill the base of your pan with a neutral oil such as olive or rice bran oil, and place over medium heat. Add heaped tablespoons of the mixture, and cook for 2-3 minutes on each side, or until golden.
Serves 4 or so with a big helping of salad xo
